Beef vermicelli lettuce cups / bowl
A fresh, flexible meal that works wrapped in crisp lettuce cups.. on as a bowl when you’re lazy.
You’ll need:
~100g Beef mince (or lamb mince)
1 bunch of rice vermicelli noodles
4 - 5 cos lettuce or iceberg leaves
Cucumber, radish, spring onions (zuchinni or daikon if you wish to fry w the beef)
Red cabbage
Sea salt
Soak noodles as per the packet instructions. Cook the beef with a little oil in a frypan. Optional to include finely cut daikon, zucchini, red onion etc. Add sea salt to taste.
Serve by placing vermicelli over lettuce & spoon mince on top. Garnish with spring onions, radish and cucumber.
Using the same pan, sautee cabbage adding sprinkle of sea salt. Arrange red cabbage on top of lettuce or in your bowl.

*I’ve only used sea salt due to the low histamine diet. You’re welcome to make a fish sauce dressing (thai or vietnamese) if you’re wanting extra flavour.
