Coconut Oat Balls
Ingredients:
1½ cup rolled oats
1 cup pitted dates
½ cup cranberries
½ cup coconut (+ more for rolling)
2 tbsp chia seeds
1 tbsp psyllium husk
2 - 3 tbsp liquid (water or milk)
Pinch of salt
If your dates are too firm to pulse, soak them in hot water for 5 minutes, then drain.
Place dates in food processor and pulse until they form a sticky paste.
Add oats, chia seeds, psyllium husk, and salt. Pulse a few more times until the oats slightly blitzed & mixture clumps together.
Add dried cranberries and coconut. Pulse briefly to incorporate, If mixture is too dry or crumbly, add 1 tbsp of liquid at a time.
Note: psyllium husk absorbs moisture, add more liquid if unable to roll into balls
Roll 1 tbsp at a time into balls before rolling into extra shredded coconut.
Place into fridge for at least 30 minutes - a great snack pre or post class!
